anhydrous: 7558-79-4; Dihydrate: 10028-24-7; dodecahydrate : 10039-32-4

Character:

It is white or colorless rhombic crystalline or prismatic crystal. It’s easily soluble in water, but insoluble in ethanol. The relative density is 1.63 and  melting point is 34.6. If heated to 180, it may lose crystal water, convert to anhydrous.

Uses:

In food industry, it is used as agent for baking to avoid oxidation stain and as emulsifier in dairy product to prevent egg white from solidification. It is also used as emulsifier and chelae agent for solid drinks.

Packing:

 It is packed with polyethylene bag as liner and a compound paper-plastic woven bag as the outer layer. The net weight of each bag is 25kg.

Storage & Transportation:

 It should be stored in a dry and ventilative warehouse, kept away from moisture and hot. Furthermore, it should be stored separately from poisonous substances; unload with care so as to avoid damage to packing.
